Carrot Ginger Red Pepper And Turmeric Soup Recipe

At this time of year I always crave comforting home-made food, I definitely cook a lot more in the wintertime. As a busy mam (aren't we all busy these days) I am often short on time and don't get to experiment in the kitchen much these days so normally play it safe making meals that we all know and love. However, sometimes it can get a bit boring eating the same foods over and over again. So earlier this week I decided to make a new soup as I really fancied a bowl of warming home-made soup - perfect on cold winter days!

I had been sent some Turmeric from Schwartz and decided to try and incorporate this into my soup recipe and made a carrot, ginger, red pepper and turmeric soup. It was not something that I had ever made before but I was pleasantly surprised with how it turned out as it was comforting but had a little bit of a kick from the turmeric.

Ingredients 


  • 2tbs vegetable oil 
  •  1 white onion - chopped
  • 750g carrots - chopped 
  • Small piece of ginger - grated 
  • 2 garlic cloves - crushed 
  • 1 red pepper - diced 
  • 2 tsp  Schwartz turmeric (available from Tesco)
  • 1ltr vegetable stock 

To Make 

Firstly I prepared all of my ingredients before heating the oil in a large pan over medium heat. I then added the chopped onion, carrots and red pepper until soft (around 10 minutes). I then added the crushed garlic, ginger and the turmeric mixing well before adding the hot vegetable stock. I left to simmer for around 15 minutes on a medium heat stirring occasionally.  

Once the carrots were tender, I blended the soup in the blender until it had a nice smooth texture. Before returning to the pan to warm back up and serve with a crusty bread roll.

There was enough for two large bowls of soup, although you could easily have made four small ones instead.  

It took around 30 minutes to make and only a few minutes to prepare.
