A Tasty Taco Treat For Tea

Having three children and a partner that works full-time shifts I am always looking for quick and easy meals to make for tea each night, as I simply don't have the time to spend ages cooking in the kitchen. I like my children to have a home cooked meal each day and they all enjoy a variety of meals from around the world. One of our all-time favourite cuisines is Mexican food, we often go for Mexican meals out and fajitas, enchiladas and Chill's are regular dishes on our midweek menu. 

So when we were recently sent some Old El Paso stand 'n' stuff soft taco kits in mouthwatering smokey BBQ flavour I knew that they would be a big hit in our household, I could not wait to try them out. We have tried tacos before but never these soft smokey BBQ ones and I was eager to see what they would taste like. Each pack comes with 8 Stand 'n' Stuff soft flour tortillas, a sachet of BBQ seasoning and some Taco salsa.

Making these tacos was so quick and easy I simply browned off some mince and added the BBQ seasoning whilst warming up the tacos in the over and chopped some salad. It was super quick, super simple and was ready in around 20 minutes which is perfect for a family meal. I love how these tacos are soft and are made for stuffing with food as it makes them perfect for children to hold and eat without spilling food everywhere.

I stuffed the Stand 'n' Stuff Tacos with iceberg lettuce, chopped cherry tomatoes then spooned in the BBQ mince before topping with salsa and grated cheese. They tasted utterly delicious and were a huge hit with clean plates all around. The BBQ seasoning was really tasty and perfect for young children as my one-year-old is not a fan of spicy foods so these were perfect for him and he enjoyed his meal and managed to eat his soft taco no problems at all. 

We made a bit of a Mexican feast with our meal and served the Tacos with some homemade nachos (oven baked tortilla chips with melted grated cheese and topped with salsa, guacamole and soured cream) and some spicy potato wedges. We all had very full tummies after our meal but it was so delicious and defiantly something that we will be making again soon, I am sure it will soon become a regular dish in our household.

  1. I love Mexican food - we probably have it once a week. It is annoying that the kids can't handle spicy food yet as I like it spicy. They normally have chicken nugget wraps with cheese and tomato x
