Every weekend I have decided to share a recipe of a meal that I have loved whilst on the Slimming World plan. When I am eating healthier I sometimes get bored of eating the same meals over and over, so I have been making sure I try out a few new recipes each week. Last week I shared my chicken fajita recipe and this week I made BBQ pulled pork in my slow cooker, it was syn free and delicious.

Slimming World Slow Cooker Chicken Fajitas Recipe
Regular readers will know that I am now back on my Slimming World diet in a bid to lose weight once and for all. When I have followed the Slimming World plan before I always stuck to the same meals so this time I have decided to try out lots of new recipes, so that I don't get bored and turn to unhealthy foods. This week I decided to dust off my trusty slow cooker and make some Slimming World style syn free chicken fajitas and thought I would share my recipe.

Slimming World Mushy Pea Curry Recipe
I have been on the Slimming World diet plan for a while now and I have found that I have been making the same meals all the time and getting bored of them. So when I heard people talking about mushy pea curry and saying how easy it is to make and delicious it tasted I thought I would give it a try. I will admit when I heard people talking about it I thought it sounded horrible but it really is tasty and very filling, it works well with rice or as a jacket potato topping. So here is the recipe I used.
Ingredients - Serves 4
- 2 Tins of Mushy Peas.
- 1 Tin of baked beans
- 1 Tin of Chopped Tomatoes
- Diced chicken ( optional )
- 1 large sliced onion
- Few sliced mushrooms ( optional )
- 2 crushed cloves of garlic
- 1 teaspoon chilli powder
- 2 tablespoons of medium curry powder

Slimming World Diet Coke Chicken Recipe
Since joining Slimming World i have been trying out lots of new foods and recipes and one of the recipes i kept hearing was diet coke chicken. When i first heard of this i thought it sounded awful but people said it was nice so i gave it a try and i actually liked it and my twelve year old loves it. So here is the recipe.
You will need
- A bag of chicken or 2-4 chicken breasts.
- 2 cloves of garlic.
- 1 large or 2 small onions.
- Red and green pepper.
- 1 can of diet coke.
- 8 tbsp passata.
- 1 tbsp dark soy sauce.
- 4 tbsp tomato puree.
- 2 tsp Worcestershire sauce.
- 1 tsp dried mixed herbs.
- 200 ml chicken stock.
- Fry light cooking spray
To Make
Chop the chicken into chunks and also the peppers, finely dice the onions and garlic cloves. Then spray a pan with frylight on a high heat. Add the chicken , peppers and onions to the pan until they are golden brown. Once they are cooked add the full can of diet cola, the passata, tomato puree, garlic, chicken stock, Worcestershire sauce, soy sauce and mixed herbs and stir it all together well. Bring it to the boil and then simmer on a medium heat to thicken the sauce up. Once it is all cooked and the sauce has thickened it is ready to serve.
To serve
I had mine with boiled rice and a few sweet potato slimming world style chips. But you could have it with anything you like such as chips, wedges, baked potatoes, rice or noodles. It is a really easy to make simple dish and it is all free on the extra easy eating plan so you can eat as much of it as you like.

Slow Cooker Slimming World Campfire Stew Recipe
I have been trying out some slimming world friendly meals in a bid to eat healthier after having my son a few months ago. I recently made a slow cooker Campfire stew which was simple to make and ideal for a hearty winter meal for the whole family to enjoy.
